Zesty Carrot and Citrus Salad
This spicy carrot and citrus salad is delicious and so quick and easy to make.
Rich in fibre, both soluble and insoluble, vitamins (C, B6, folate) minerals(iron and calcium) and bioactive plant compounds.

Bioactive plant compounds, including beta carotene and flavonoids found in carrots and oranges, have anti-inflammatory and antioxidant properties that help to protect against chronic inflammation and disease.
Adding additional spices (cumin, cinnamon, coriander ) and fresh mint not only adds to flavour and colour but increase the diversity of plants sources to support gut health.
Recipe
Handful or raisins or sultanas
Zest and juice of 1 orange plus another orange, chopped into small pieces (peeled and de-pipped)
500g carrots, chopped
1/2tsp cumin
2 generous pinches cinnamon
Fresh chopped coriander to taste
Fresh chopped mint to taste
2tsp cider vinegar
Salt
Pepper
Squeeze of lemon juice
Grate the carrots, add the handful of raisin or sultanas. Mix orange juice, spices, lemon juice, salt and pepper and add to the grated carrot and fruits.
Add fresh coriander and mint and mix to serve.
Eat as a snack or a side to grilled chicken, white fish or other plant based options.
